European recipes give liquids in millilitres. A US cup is 8 ounces, which is 236.59 ml, not the 250 ml of a metric cup. That gap can throw off a cake, so it is better to convert than to round in your head.

Why convert millilitres to fluid ounces?
Millilitres turn up all the time even where the ounce rules day to day: on medicine bottles, in science, on imported food and drink, and on any water or wine bottle marked in metric. To picture those amounts in ounces, you convert. You see it on a 750 ml bottle, on perfume labelled 100 ml, or on a European recipe that lists 250 ml of milk.
The catch is that there is more than one ounce. The US fluid ounce is 29.5735 ml, while the UK (imperial) one is 28.4131 ml. The gap is about 4%, so by the time you reach a wine bottle it passes a whole ounce: 750 ml is 25.36 US ounces or 26.40 UK ounces. That is why you pick the measure with the Ounce type switch, and the result field shows the abbreviation of the one you are reading: US fl oz or UK fl oz.
We set the US ounce by default, since it is the one you meet most often. If a product or recipe comes from the United Kingdom, switch to the UK ounce.
How does the ml to ounces conversion work? Formula and example
Each of the two ounces has its own fixed factor. The US fluid ounce is exactly 29.5735295625 ml, and the UK one is exactly 28.4130625 ml. Both values are defined, so the conversion comes down to a single division.
Formula for the US ounce: ounces = millilitres ÷ 29.5735. For the UK ounce: ounces = millilitres ÷ 28.4131.
Example: you want to know how many ounces are in a 750 ml wine bottle. You substitute: 750 ÷ 29.5735 = 25.36 US ounces. The same bottle in the UK measure is 750 ÷ 28.4131 = 26.40 ounces. Both numbers are correct; they simply describe two different measures.
Watch out for one mix-up. The fluid ounce (fl oz) measures volume, while a plain ounce (oz) with no qualifier is usually a unit of weight equal to 28.35 g. This tool handles volume only. If a package lists flour in ounces, that is weight and you need a mass converter instead.
